why the change?

So the more I research the more I am drawn to being a whole food vegan. Our bodies are made for a plant based diet. If everyone did this our so called health care crisis would be solved. It prevents so much disease and cures as well. We are an overfed undernourished society. The science is out there in abundance and has been for years but seems to not be popular because it would require people to give up their addictions and make changes.

Believe what you want but I believe we should be eating a plant based diet. Aside from science, there is a religious aspect to me as well. The word of wisdom says to eat meat sparingly, only in winter or famine. Well of course if you don't have plants to eat then you have to eat meat but in today's world that is not a problem. We can get fresh fruits and vegetables and grains year round. We have so much available to us, not just what we can grow locally. We would have even more produce if there were not so many animals being raised for meat. Many prophets and church leaders did not eat meat and attributed their good health and strength to it. As I have been reading about all of this, I have felt the spirit testify to me that I need to do this. It's like a spiritual conversion. I have been brought to tears many times. This is not just a whim. I believe that our testimonies grow about different parts of the gospel at different times in our lives, you know line upon line precept upon precept.

This has actually been coming for a while. I've thought about and tried vegetarian diets before but never stuck with it but instead just chose what I thought were healthier meats and we don't eat meat everyday anyway. I have taken myself off of dairy for a long time. I don't handle much well, makes me feel yuck and I have read a lot of studies against drinking cows milk for various reasons plus I don't need the calories. I have been avoiding all artificial sweeteners, colors, flavors, preservatives for a long time too. Can you say carcinogen?! I have concerns with the air quality and all of the toxins in our environment. For a society that is supposedly so smart and wealthy we sure have polluted our lives and it just drives me nuts that the major problems with our society like cancer, obesity, diabetes, heart disease, autism spectrum disorders etc are so obviously the result of this and yet we ignore the obvious solution. Instead of having discipline and saying no you can't pollute my air and my water and my food we let it happen and spend tons of money and research on medicine to cover up the symptoms instead of looking at the cause.

I certainly think there are those out there who eat way worse than we ever have but I have kids that display symptoms of some autism spectrum disorders and I have been racking my brain for years wondering what I could do to help them without drugging them. I absolutely refuse to medicate my kids for this. I think the side effects greatly outweigh the benefits and that it's wrong to train a child to depend on a chemical to make it through the day. I think that in the past I thought it would be healthier for me to be vegetarian or vegan but I didn't have the drive to really stick to it but now that I feel like it could really make a difference in the lives of my children, how can I not do it? It has really been stressing me out to begin with wondering what I will cook now but as the days go by it doesn't seem as big of a deal as I thought. The kids are trying more foods and eventually their tastes will change and they will get better at eating some things. Honestly, my kids have never been real meat lovers anyway. Seems like I used to fuss at them to eat the meat. They have always loved the sides like bread, rice, pasta, potatoes, corn, peas, green beans, carrots etc. Now the trick is to get some of them to like beans.

Our world is full of wonderful nutritious food that our Heavenly Father has provided for us and in that food is the nutrition that gives our bodies the power to heal itself and remove toxins but if we eat a bunch of processed junk our bodies can't do that. I guess in the past I was choosing to remain ignorant or just not think about what I put in my body but no more. We are what we eat.

May the Lord bless us as we make this transition and help us not fall back into our old ways.

maybe all the righteous will eventually become vegetarian and help bring about the millenium...kind of cool if you think about it. It would help us be healthier and stronger and live longer and helps clean the earth and all animals will be our friends. just kind of fun to think about. i'm not pretending to be enlightened about the future.

home

We got home safely without any car repairs Monday night. The kids went to school Tuesday except Lidia still had a bit of fever so she stayed home but went back Wednesday. Now no one has fever but we all still have colds. My head is congested. I hate it. Lidia and Tristan have brought home make up work but not the other two. Lucky them I guess. Avery only missed one day anyway. I have been working on laundry since we got back and I'm still not done. Oh and the beds and pillows at the Comfort Inn were actually comfortable and I slept well. That is a big deal for me, I usually have a hard time sleeping in other beds. Cory and I didn't really like sleeping on a king size though, not cozy, way too much room.

I have removed all dairy and meat from our house except for some fish and I plan to occasionally serve something with meat. My goal is animal products being less than 10% of our diet and the rest unprocessed and plant based. We have organic soy milk with cereal. I got my Blentech blender and so far I really like it. The Kitchen Aide one couldn't even make green smoothies well. It would get an air pocket around the blade and just spin and do nothing. The Blendtech doesn't do that. It's great for smoothies. Getting my kids to eat leafy greens can be a challenge so I give them smoothies that basically consist of a handful of spinach and some juice and some frozen fruit. We eat whole grains but I have cooked mostly with white flour and refined sugar in the past so I am experimenting with healthier recipes. If you use whole wheat pastry flour it is pretty much the same as white but better for you. It's pricey though. Gotta pay for good food. It sucks that the cheap stuff is trash. Also one tablespoon of ground flax seed with 3 tbsp of water whipped together substitutes for an egg. I bought a few vegan cookbooks. I am learning some things. Tonight I made my usual vegetable soup but put black beans in it instead of stew meat. It was a hit. My kids love my vegetable soup and it's so easy to make and healthy. Today for lunch Avery and I split a footlong veggie sub from subway and he liked it and ate it all up. What a good boy. The older kids are funny about when they will or will not eat lettuce. He did insist that I take his onions and tomates but he was fine with the lettuce, cucumbers, olives, bell peppers, banana peppers. I made vegan chocolate chip cookies tonight. They are good. Still have lots of sugar though. I guess it's ok since I don't usually make treats more than once or twice a month. My kids love fruit. I bought a watermelon and a pineapple and Avery says we are having a watermelon pineapple party. Lidia and Aiden are trying to be good sports about eating healthier. They understand my reasoning when I explain to them and they want to be healthy. Tristan and Avery resist somethings more but tonight Tristan ate his beans and potatoes which is good for him. He usually doesn't like the texture but since it was full of tomato juice he said he couldn't tell.

So tonight Tristan slipped on the bathroom floor which Avery had squirted water all over with a bath toy. I'm not sure what he was doing when he fell but he somehow landed flat on his face and I think broke his nose. His nose is bruised and cut and his forehead is bruised and his nose bled. I am glad that it didn't bleed for long like his nosebleeds of the past did. He was very shaken and upset. It was a loud bang and that true pain cry that you don't hear often. Poor kid. His face may not look too great when he waked up. We iced it until he went to bed and he's sleeping propped up.

FYI in case you didn't know, take the pits out of your dates and throw them in the trash. One ended up in our garbage disposal and it didn't work until Cory got it all out and fixed it tonight.

The second is the group that crossed the rope and set up a campfire on the beach. The park ranger was not happy and maybe calling for backup or something.
